Like acacia honey, it contains a lot of fructose. The coloration is dark, up to brown. Stored for a long time in conditions that allow access to light, it changes color to dark brown, almost black. It crystallizes to form thick, hard crystals, deposited in liquid honey plasma. After crystallization, it usually takes on a brown color. The taste is sharp and even slightly burning.
