Single Malt Lambay was produced at the West Cork distillery. In the next stage of production, the whisky was aged in bourbon casks. The final maturation phase was in cognac casks from the Camus cellars, 'seasoned' for several months in the Lambay Island salt breeze. Before bottling, the alcohol content was set at 43% by adding water from the island's Trinity well.

Aroma: malty and fruity: apples, pears, grapes, vanilla, brown sugar, milk fudge, white pepper, hay and oak notes. Taste: mild, vanilla, honey, baked apples, milk chocolate, coconut shavings, caramelised nuts, some herbs.
