Deviating from the known paths
Among the varieties of honey available in Poland, there are some that do not flow into the mainstream and rarely, if ever, find their way into consumers' awareness and onto their tables. A perfect example is phacelia honey, one of the least known yet most appreciated honeys from the domestic market. Its main ingredient is nectar extracted from phacelia. In Poland, the most popular species is the blue phacelia, often referred to by beekeepers as the queen of melliferous plants. It is often cultivated as an ornamental plant because of its showy flowers. Sometimes blue phacelia is used as a feed ingredient, less often as a green manure. Above all, however, it proves itself as a melliferous plant and crops are mainly established for this purpose. Phacelia is an annual species. It grows quickly and flowers for quite a long time - up to six weeks.
How do you recognise it?
Phacelia honey is characterised by a subtle sweet flavour with a discreet, but perceptible hint of citrus, and a pleasant floral aroma. It is usually light yellowish in colour, although this is not the rule, as the colour is largely dependent on the soil in which the phacelia grows - the better and more fertile, the lighter the honey. The colour is influenced by admixtures of other nectars, mainly from plants flowering in the immediate vicinity. Their presence is not difficult to find, as phacelia plantations are often and easily weeded. Phacelia honey begins to crystallise just a few weeks after harvesting. It is lighter in colour than phacelia and has a characteristic creamy texture. Thanks to its delicate sweetness combined with the inviting scent of the flowers, this honey is liked by the youngest palates. However, it is worth remembering that dieticians do not recommend including honey in the diet of children who have not yet reached the age of one year.
