Origin of goldenrod honey

Goldenrod honey is a relatively new and also rare variety of honey. It owes its uniqueness to goldenrod, a plant customarily referred to in Poland as mimosa. Goldenrod grows throughout the country. It blooms from July to September, sometimes even longer, which Julian Tuwim recorded in his poem with the words: "with mimosas autumn begins, golden, fragile and pleasant". It is most often used as a herbal raw material, primarily to support the treatment of urinary tract ailments. Tlover is also used externally - for skin ulceration problems, wounds that heal with difficulty, or during inflammations of the throat and mouth. Despite being considered a weed by many, goldenrod is also a highly sought-after honey plant among beekeepers. The nectar found in the flowers is usually the last that bees collect before the onset of winter. The autumn flowering of goldenrod makes honey extraction more difficult, as many beekeepers are already preparing their colonies for wintering. Therefore, goldenrod honey is often used as food to help the bees survive the cold winter months.

What are the characteristics of goldenrod honey?

In its liquid state, goldenrod honey takes on a light yellow, sometimes even amber colour. It crystallises relatively quickly, forming a thick, although not necessarily lumpy, cream which is easy to spread on the surface of, for example, a cake. In the form of a crumb, its colour brightens noticeably. In taste, this honey is exceptionally sweet, distinguishing itself from other varieties by its lemony acidity. It is also known for its invigorating, pleasant aroma, which unfortunately evaporates with time if stored incorrectly (it is worth ensuring that the container in which it is placed is tightly sealed). You should also remember that, because of its high biological activity, goldenrod honey should be kept at temperatures lower than those at which other varieties of honey are stored.
