Deviating from familiar paths
Among the varieties of honey available in Poland, there are those that do not flow mainstream, and to the consciousness of consumers and on their tables they rarely, if at all. A great example is phacelia honey, one of the least known and at the same time the most valued honeys from the domestic market. Its main component is nectar obtained from phacelia. In Poland, the most popular species is blue phacelia, often called by beekeepers the queen of melliferous plants. Due to its spectacular-looking flowers, it is often grown as an ornamental plant. Sometimes blue phacelia is used as a feed ingredient, less often as a green manure. Above all, however, it works well as a melliferous plant and for this purpose mainly crops are created. Phacelia belongs to the annual species. It grows quickly and blooms for quite a long time — up to six weeks.
How to recognize it?
Phacelia honey is characterized by a subtle sweet taste with a discreet, though perceptible hint of citrus, and a pleasant floral aroma. It usually has a bright, yellowish color, although this is not the rule, because the color is largely dependent on the soil on which phacelia grows — the better and more fertile, the brighter the honey. The color is influenced by admixtures of other nectars, coming mainly from flowering plants in the immediate vicinity. Their presence is not difficult, because phacelia plantations often and easily weed. Phacelia honey begins to crystallize just a few weeks after harvesting. Krupiec is lighter than patoka, characterized by a characteristic creamy consistency. Thanks to its delicate sweetness combined with the inviting scent of flowers, this honey is liked by the youngest palate. However, it is worth remembering that nutritionists do not recommend including honey in the menu of children who have not yet turned one year old.
