"Ars distillandi aurum potabile" - "the art of distilling potable gold " - was the term used in the Middle Ages to describe particularly successful distillates. In its long tradition, dating back to the beginning of the 13th century, the Pircher distillery, which has its roots in monastic activity, has remained faithful to this saying.
The official history of limoncello begins in the 19th century, but it certainly existed much earlier. In Italy, it is a symbol of Christmas. The name limoncello is reserved only for liqueurs that have been made from lemons from the Sorrentine Peninsula - because of the volcanic soils on which they grow.
