Obtained from the nectar of thyme flowers. It has a strong, intense aroma. The taste is not very sweet, clearly sour. Widely considered one of the most aromatic and delicious varieties of honey. Due to the characteristic ruby color with an amber tint (after crystallization amber-orange), it is called "red honey". Its unique taste qualities are widely used in French cuisine. It is also used as a basic component or additive that enhances the aroma of mead and tinctures.
It has strong bactericidal properties. It is recommended for all bacterial infections, m.in: upper respiratory tract, digestive system or skin. French clinical medicine has been using it for many years in gastrology, treatment of difficult to heal wounds (including postoperative wounds), urology and gynecology (combating inflammation).
