This spontaneously fermented apple mead is made from a blend of clover and rapeseed honey and locally grown apples Ingrid Marie and Elstar from a 1722 orchard.
It is a liquor in a slightly straw color with an intense aroma of apple peel and honey. It is sweet with a slight acidity and a tannic background for balancing sweetness. It tastes best slightly chilled.
